birthday cake protein rice krispie treats

Ingredients

  • 3 cups of gluten free puffed rice cereal (cleaner version) or “ricies”.
     

  • ½ cup natural nut butter. We used Ceres Organic Almond Butter but you could use Cashew or Peanut Butter or any combination of your favourites.
     

  • ½ cup “sticky sweetener”. We used sugarfree maple syrup to keep the total sugars and calories down but you could use any sticky sweetener like brown rice syrup or honey.
     

  • 2 scoops of Optimum Nutrition Gold Standard Whey in Birthday Cake Flavour. This same recipe would work with any other flavor of Gold Standard Whey – it is an awesome protein to use in recipes!

Directions

  • Combine nut butter and sticky sweetener in a large microwaveable bowl. Microwave on high for one minute. If the contents isn’t fully melted you may need a little longer.
     

  • Add in GS Whey Birthday Cake. Use a spoon to mix thoroughly.
     

  • Add in your puffed rice cereal and mix gently (so you don’t crush the cereal) till fully combined. It should be quite thick and sticky.
     

  • You either need a baking dish (ideally I would line it) or small cupcake molds/trays. We used rubber bite-sized cupcake molds/trays as they are non-stick, they go well in the freezer and it was super easy to pop the bite sized treats out from the rubber trays.
     

  • Press mixture into cupcake molds or baking trays. You want the mixture to be about half an inch thick.
     

  • Place in the freezer for an hour or so to “set”.
     

  • The rubber cupcake molds are great as you can pop out each treat easily. If you used a baking tray you’ll want to slice your treats.
     

  • This amount of ingredients made 20 bite sized “cupcake” shaped treats!

The macro’s of your treats depends on how big they are & of course which cereal, sticky sweetener & nut butter you used but our recipe above has a great balance of carbohydrates, protein & fats.

Store your treats in the freezer in an airtight container to keep them at their best. You can eat them straight from the freezer. A few of these treats would make a perfect grab & go pre-workout snack!
