optimum nutrition protein ice cream

Protein Ice Cream is one of the most under-rated Competition Prep tricks! I include this as a dessert suggestion for all of my girls for their final meal of the day in accordance with their personal macro’s to reach their personal goals!

You can make incredible tasting “ice cream” and add extremely minimal calories other than your favourite Optimum Nutrition Protein Powder making it perfect for anyone who wants to enjoy dessert whilst eating according to their goals!!

I will share my favourite recipe along with some tweaks or additions you can make depending on your macro’s and/or goals.


  • Your favourite Optimum Nutrition Protein Powder – my favourite is Gold Standard Whey in White Chocolate. Use as many scoops as you need to get your appropriate protein macro’s. I used one scoop (24g Protein) (see note below regarding different types of protein).

  • Lots of ice!! I usually use about half a tray of ice cubes (6 large ice cubes).

  • ¼ teaspoon of Xanthan Gum or Guar Gum. These are two variations of fibre thickeners. I prefer to use Xanthan Gum – I find it works best. I have seen recipes using both together and I have personally used both.

  • Y’all know I have a stevia addiction. You can use any sweetener in your protein ice cream or no sweetener if you find the protein powder is sweet enough. I have a mega sweet tooth and I LOVE the flavoured liquid stevia that I order from iHerb (details below!). I typically use French Vanilla, English Toffee & Coconut flavoured stevia – a good squirt of each. I also sprinkle stevia granules on top…. Lol. I told you I had a stevia problem!

  • Water (with this amount of ice I use around ¼ – 1/3 of a cup. You need to be careful not to add too much. You’re better to add ¼ cup and then add more if you need to. It’s hard to rescue the situation of you put too much in to start with.


  • Put all ingredients into a Ninja/Blender

  • Process till thick & creamy – this part is the key! First you need all of the ice to crush & for the ingredients to mix well but the key is actually to let it process for much longer than that as it gradually gets fluffier & thicker by leaving it longer!

  • Once your ice cream is thick and creamy you can eat it right away OR you can put it into a bowl and place it into the freezer for 30 minutes to an hour. I like to freeze mine as it sets and is like real ice cream, rather than a protein mousse straight from the Ninja.

  • Dessert’s up!


  • You may wish to replace water in the recipe with milk of your choice (I don’t think this is necessary but if you were trying to gain weight and wanted extra calories this would be a way to do it!)

  • You can add additional carbohydrates by adding fresh or frozen fruit. From my experience, it works best adding frozen fruit to your mixture to replace some ice.

  • You can add additional fats by adding nuts, nut butter, seeds. I speak from personal experience when I say that a teaspoon of Almond Butter up in here is ridiculous!!!!!

  • You can use a mixture of Optimum Nutrition Gold Standard Whey Protein AND Optimum Nutrition Gold Standard Casein Protein. My recipe (pictured) I used 1/3 scoop Vanilla flavoured Optimum Nutrition Casein Protein and 2/3 scoop White Chocolate flavoured Whey Protein. Casein is a slower digesting protein and it’s texture makes a thicker and fluffier protein ice cream than whey alone.

  • You can add some low calorie additions for flavor, like different essences, PB2 powder, cocoa or Sugar free hot chocolate.

  • My FAV stevia product for protein ice cream (& my protein oats, & my protein slice!!) is called “Better Stevia” by the company NOW Foods. I order it from iHerb.com and shipping to New Zealand is speedy & not too expensive. Flavour I can vouch for so far are – French Vanilla, Coconut, English Toffee, Dark Chocolate, Hazlenut.

  • Stevia. Is. Life. (For real!)
